A Birthday Dinner Party for Nick!

Nicholas, the love of my life, my stabilizer (and my "tranquilizer" as some of my friends have called him) turned a happy 26! Who would have thought that we would have two kids, drive a mini van and live in our own house (in Iowa of all places) at 26 and 23? So many big things! Anyway, Nick, the luckiest guy in the whole wide world (wink, wink) had a fabulous birthday weekend! I threw him a birthday dinner party that was a huge success! Hilery and Nora came over that morning and helped me decorate. That afternoon I got to work cooking up a feast worthy of a 26th birthday (with Alec's help of course.. my little chef really wanted to wear an apron!)

I asked Nick many times what he wanted for his dinner party and he was very reluctant to give ideas... except that he wanted "an ice cream cake and 26 candles!"
"A what?" I asked.
"An ice cream cake and 26 candles!"
"Do you know how long it takes to make an ice cream cake? And 26 candles, like set off the smoke alarm?" I asked with a bit of surprise.
Well if that's what the birthday boy wants then that's what he gets! It did take time, but it was delicious. Nick wanted to make sure that there would be leftovers after the party and there definitely was, as you can see from the picture. You can't really see all the layers, but there are 6 different layers to this cake. (6= time for each layer to freeze before adding another) It was delicious though and I'm glad I got to try such a yummy recipe!

I also made an Apple Pork Tenderloin, with a beautiful apple chutney sauce, Roasted Rosemary Red Potatoes, Green Beans, and a Strawberry Salad. It was divine and I only wish I could cook for him like that more often!

Nick isn't a fan of big parties, but it worked out in my favor. I was so excited to use all my pretty serving dishes and that I actually had 8 matching plates, 8 matching glasses, and silverware and serving-ware that matched! We played some games, ate yummy food, and talked the evening away. The kids were great and Elyssa slept all through dinner so no one had to hold her and attempt to eat at the same time. It was beautiful! How lucky we are to have fun friends to celebrate with! Happy Birthday, Nick! We're glad you didn't set off the smoke alarm!
