~Deck Dining~

The outdoor dining season has begun! 
 We tried to kick it off on Memorial Day with a barbecue but the weather x-ed that idea.  So far it's been kind of a rainy cooler June, but maybe it's always this way in Iowa...  Either way we've decided to take our dining outdoors when the menu permits and it's not blowing down tree limbs, pouring buckets of rain on our heads, or chilling our food faster than we can eat it.  Alec seems to enjoy it.
Lyssa doesn't mind either as long as you don't take away her mango... he was just trying to cut it up for you sweetie!  Ahh, to be so dramatic and think the world is ending over mango.... I don't know where she gets it from! (dripping with sarcasm)
Saturday Night's Menu?  Stir-fried Squash Zucchini Sausage, Roasted Red Potatoes, and Fresh Mango topped off with a tall cold glass of milk.
Stir-fried Squash Zucchini and Sausage
2 fresh summer squash, sliced
2 fresh zucchini, sliced
1/2 lb. Kielbasa sausage, sliced
1/2 small onion, chopped
handful of frozen green beans
2 cloves garlic, pressed
Extra Virgin Olive Oil
Salt, and Freshly Ground Peppercorn Medley

In electric skillet (or on stove... I just prefer to not use the stove because it is crazy old and slow and heats up the house) heat 2 Tbsp olive oil to 250 degrees, saute onion and garlic.  Add green beans and sausage, stirring occasionally.  When almost done, toss in zucchini.  Add summer squash last for 1-2 minutes (any longer and it turns to mush).  Salt and pepper to taste.  Serve immediately, but makes yummy leftovers for lunch the next day.  Enjoy!
