Nick recently entered a chocolate baking contest at work. He decided to make Grandma Rowley's Chocolate Cake (or as my college roommates called it "Cousin Mark's Chocolate Cake") and enter it in the contest. Unfortunately he forgot about it until late the night before so it was a quick throw together early that morning. It still tasted divine as ever and he got lots of good comments, though he did not win. I was happy he brought home the few leftovers for me. The cake was great and he topped it off with cream cheese frosting, a can of cherry pie filling, and then drizzled dark chocolate across the top. I didn't get a picture of him with the whole cake before he had to rush out the door, but I did get this one of him with the leftovers.
This cake is real winner when you're in a jam because it's made of things that you would have in your food storage! I doesn't have eggs or butter... just all unparishable food items! The recipe is as follows:
Grandma Rowley's Chocolate Cake
Ingredients:2 c. sugar
3 c. flour
2 tsp. baking soda
1 tsp. salt
3 heaping Tbsp. cocoa
3/4 c. vegetable oil
2 Tbsp. vanilla
2 Tbsp. vinegar
2 c. water
Instructions:
Combined all ingredients and bake at 325-350 for 40 minutes to 1 hour.
